Site Review: My Household Capers

I thought I'd start a new label for my blog in terms of doing site reviews of blogs/websites/youtubes that I love/hate. So, what better place to start than my mum VG's blog. Okay, I may be a bit bias here, after all she is my mum (and still FEEDS me :P )

Her site is filled with all sorts of culinary delights, tips on gardening and cooking, an ever expanding glossary, book, movie and DVD reviews and some really weird jokes.

She lets me put some of my favourite recipes up on my site and sometimes she even puts up my own recipes on her blog.

If you check out her blog, you can see that she is more into blogging than me as she updates it every few days. Since she started blogging late May 2008, she has 454 posts as of now; and of that 212 are recipes.....now thats a whole lot of cooking!

Overall I give her blog 4.5 out of 5....only because her site is TOO GIRLY.

COOKING CLASS: YUMMY BANANA CAKE

Whenever we have overiped bananas at home, my mum or dad always either make banana cake or fried banana balls.

My mum also makes a steam banana cake which is so yummy. I'll put this up the next time she makes this or the banana balls.

Ingredients

1 cup sugar

1 cup butter (around 225g butter)

4 eggs - separated

2 cups self raising flour

1 heaped tsp baking powder

1 heaped tsp baking soda

4 large bananas or 7 small bananas

1/3 cup condensed milk

2 drops banana essence (can be purchased from Asian grocers)

Method

Preheat oven to 160°c. Line large square tin with baking paper and lightly grease with butter.

Sift flour, baking powder and baking soda together. Set aside. Grind bananas with condensed milk. Set aside.

Cream butter and sugar until fluffy. Add egg yolks only. Continue beating.
Add in banana mixture, then gradually add in flour.

In a separate bowl, beat the egg whites until fluffy and stiff peaks are formed. Gently FOLD this into the cake mixture. Add in banana essence. Pour into prepared tin and bake for around 40 to 50 mins.

Cover top with foil after 20 mins to ensure even cooking.

COOKING CLASS: MILO™ AND MIXED FRUIT BISCUITS

This really yummy bickie recipe is from my nani ma (my maternal grandmother). It is my favourite.

You need to dry fry the plain flour (I have no idea why – mum has always done it cos the recipe calls for it) and cool it before using.

Ingredients

250 g butter
1 cup caster sugar
1 cup custard powder
2 cups plain flour – dry fried in a pan or wok, on low flame until the flour is light and changes colour slightly
2 egg yolks
½ box of mixed fruit (Mum used half of a 375 g packet; so approx about 180 g) – chopped but not too fine
1 ½ cups Milo™
1 tsp vanilla
2 tbsp fresh orange juice with ½ tsp orange essence

Method

Heat oven to 170°C (Mum used a fan forced electric oven). Separate mini paper cups or grease mini biscuits moulds. Mix the fried plain flour with the custard powder.

Cream butter and sugar until light and fluffy. Add in the yolks one at a time and continue beating until well mixed Add in the vanilla. Using a wooden spoon, add in the chopped mixed fruit followed by the Milo™.

Using a sieve, gradually add in the flour, mixing well during each addition. Moisten with the orange juice. If the dough is too hard, add more orange juice but make sure that you add only a tsp at a time. You don’t want the mixture to be too soft. The mixture is ready if you can roll it into balls without cracking (dough too hard) or without sticking too much (the dough will still stick, but it would not be too uncomfortable to roll).

If using mini paper cups, roll your dough into balls the size of a marble. Put into the cups and press down slightly to flatten the top. Repeat the process until the dough is finished. Bake in oven for 15 mins, turning the biscuits once during the process. Make approx 120 biscuits using the mini paper cups.

COOKING CLASS: SPECULAAS (SPICED SHORTBREAD)

I have been wanting to make this for a while but mum always hogs the kitchen during the weekend. But she's been unwell so I had the window of opportunity yesterday and with my dad's 'supervision' (I tend to freak out when I have to put stuff in a hot oven) I made these. Mum helped with the picture taking (thanks mum).... she's the pro but soon, I'll will be the expert as I have just started my photography course at college. I learnt to make this during my year 9 International Cooking course. Anyway....here's the recipe for my SPECULAAS.

FYI: SPECULAAS is a type of shortcrust biscuit (cookie), traditionally baked for consumption on St Nicholas' Day Eve in Belgium (December 6) and the Netherlands (December 5). In the United States and Australia, SPECULAAS are also sold as Dutch Windmill cookies.

Yah...I am showing mum's stuff off....

Ingredients

2/3 cup flour
¼ tsp bi-carbonate of soda
2 tsp SPECULAAS spice (see SPECULAAS spice mix recipe below)
1/3 cup brown sugar
80 gm butter
3 tsp milk
Blanched almond slices

SPECULAAS Spice mix: Mix the following ground/powdered spices in a bowl

1 tsp cinnamon
1 tsp nutmeg
1 tsp ginger
1 tsp cardamom
1 tsp cloves
¼ tsp aniseed

Method

Sift flour, bi-carbonate of soda and spices into a bowl. Mix in the brown sugar.

Rub in butter and gradually add in the milk and knead the dough lightly.

Either press into a lightly greased baking tray or roll out into biscuits. It should be about ¼ to ½ cm thick only.

Decorate with the almond slices and bake in moderate oven (180° C) for approximately 12 to 15 mins. If you have pressed the dough into a baking tin, immediately cut into squares and allow to cool. If you have rolled them out into biscuits, lift onto wire rack. Serve with milk, coffee or tea.

Recently I saw Underword 3 with few mates on the weekend. The movie is actually a prequel to the first movie.

It is about a LYCAN male and a VAMPIRE female falling in love against the wishes of her father.

Anyway don't want to spoil the movie. I recommend it to anyone who loves Werewolves of Vampires.

Hello to everyone all over the planet. I am Cas and this is the hub, my work. The hub is a place where I put information, recipes, reviews and other sorts of crap.
There is stuff on aliens, ghosts and anything supernatural and paranormal on this site.
Here is one case on a ghost:

RESURRECTION MARY

Resurrection Mary is a story about a young girl who people usually gets people to pick her up and take her home which happens to be outside a cemetery. The unsuspecting young male offers her a ride and takes her home. He sometimes gives her his jacket for her to wear if it is a cold night. Sometimes she just disappears from the car or she leaves in front of the man and dissolves through the bars. The next day the man goes back to the cemetery and finds his jacket on the grave of the woman he gave a ride to.
