
Whenever we have overiped bananas at home, my mum or dad always either make banana cake or fried banana balls.
My mum also makes a steam banana cake which is so yummy. I'll put this up the next time she makes this or the banana balls.

Ingredients
1 cup sugar
1 cup butter (around 225g butter)
4 eggs - separated
2 cups self raising flour
1 heaped tsp baking powder
1 heaped tsp baking soda
4 large bananas or 7 small bananas
1/3 cup condensed milk
2 drops banana essence (can be purchased from Asian grocers)
Method
Preheat oven to 160°c. Line large square tin with baking paper and lightly grease with butter.
Sift flour, baking powder and baking soda together. Set aside. Grind bananas with condensed milk. Set aside.
Cream butter and sugar until fluffy. Add egg yolks only. Continue beating.
Add in banana mixture, then gradually add in flour.

In a separate bowl, beat the egg whites until fluffy and stiff peaks are formed. Gently FOLD this into the cake mixture. Add in banana essence. Pour into prepared tin and bake for around 40 to 50 mins.
Cover top with foil after 20 mins to ensure even cooking.
